How would you like breakfasts this week to be the EASIEST EVER?! (Or pretty close to it?)
Some weekends are pretty relaxed and meal planning is no big deal. Other ones, we’re heaving and panting after a TON of Saturday and Sunday activities (sports, church, birthdays, etc….) By the time we finally collapse Sunday night, having JUST finished last minute homework and projects, tackling laundry and general tidying up, I barely have time to brush my teeth before I’m OUT.
After those crazy busy weekends, breakfast on Monday is “whatever”. It might be frozen waffles or bagels or a quick smoothie on the way out the door.
But we recently tried overnight oats (vegan with coconut milk for my dairy-free daughter) and they were a HIT!
My 11 year old son was skeptical about the coconut milk, but he ended up LOVING the oats!
I think part of the reason he loved them was because he helped make them. We had fun (pardon the crazy kitchen clutter), measuring and pouring the oats, coconut milk and a few other ingredients into the jars (with minimal mess! YAY!)
My daughter had fun helping, too! She loved pouring the vanilla with our little purple teaspoon. But I think her favorite part was shaking the jars and seeing all the ingredients come together!
As I’m sure you know if you have more than 1 kid, their personalities can be SO different. My daughter was chill, loved helping in the kitchen and then was happy to go to sleep.
The next morning, I heard the microwave pretty early. While baby girl slept in, big brother, a total go-getter, already had his oats warming up! He usually wakes up pretty early on his own (Thank you, Jesus!) And it was kind of funny that by the time my hubby and I sauntered groggy-eyed into the kitchen, he was already making it happen.
I know some people like their overnight oats cold, but he likes them warmed. Whatever works, right?!
I have a feeling we’ll be making these on a regular basis. They’re easy, healthy, yummy and FUN!
And if you’re a fan of Lisa Leake’s 100 Days of Real Food like I am, we started with her famous overnight oats recipe as a foundation and just tweaked it and made it our own vegan, coconut milk version!
INGREDIENTS
1/2 cup quick cooking old-fashioned oats
1/2 cup coconut milk
1/2 teaspoon honey
1/8 teaspoon vanilla extract
cinnamon (as little or as much as you like!)
toppings! (bananas, berries, vegan chocolate chips or carob chips, chia seeds, etc!)
DIRECTIONS
This is so easy, you’ll love it! Just pour all the ingredients in a mason jar (or other container). Blend, stir or shake (we like to shake the jars) until combined. Cover and refrigerate overnight. The next morning, enjoy your oats hot or cold!
