Panko Baked Spaghetti Squash

  • Ingredients:
  • 1 medium spaghetti squash
  • 1 teaspoon garlic salt
  • 1 teaspoon pepper
  • ¼ cup grated parmesan cheese
  • 1 teaspoon lemon pepper seasoning (optional)
  • 4 Tablespoons Butter (works best when divided into about 4 pads to distribute over noodles)
  • ⅓ cup Panko breadcrumbs
  1. Cut spaghetti squash in half horizontally. Use a spoon to scrape out the seeds and discard.
  2. Place the shells (cut side down) into a 9x11 baking dish and add 1 cup water. Cover with foil and bake at 375 for 30 minutes (until you can easily pierce shell with a fork).
  3. Remove from oven and allow to cool about 15 minutes. Use a fork to scrape the edges and remove the squash. (You may want to wear oven mitts because the shells can remain pretty hot). Discard shells and water from pan.
  4. Grease baking dish with non-stick cooking spray and add the spaghetti squash "noodles" to the pan.
  5. Sprinkle with seasonings.
  6. Add butter and cover with Panko breadcrumbs.
  7. Cover with foil and place in oven at 375 degrees for 15 minutes. Noodles should be hot and the breadcrumbs will just start to brown.
  8. Remove from oven and serve!
