This recipe for chicken adobo has a lot of sentimental value for our family.
When I was growing up we lived in Kertehm Malaysia for about 2 years. While we were there, my parents hired Vicky, a Filipino woman to help around the house. She did everything for us and went everywhere with us. She cleaned, babysat, cooked, and even went with us on all of our family vacations. She was really sweet and really loved us and we loved her.
She was a part of our family for a while. She was also a very good cook. She taught us several Filipino recipes and we loved each of them. The all time favorite in our family was her Chicken Adobo. We loved it when she cooked it for us and my mom continued to make it even when we moved back to the US. It brings back memories of Malaysia and Vicky every time we eat it.
Chicken Adobo
Traditional Filipino dish, easy for weeknights, healthy and simple, great for feeding a big family.
Ingredients:
- 1/2 cup of vinegar
- 3/4 cup of low sodium soy sauce
- 3 Tbsp Brown Sugar
- 3 cloves chopped garlic
- 8 boneless chicken thighs
- 1 cup chicken broth
- 1/2 medium yellow onion
- 1 Tbsp olive oil
- salt and pepper to taste
Instructions:
- Combine vinegar, low sodium soy sauce, brown sugar and garlic in a small mixing bowl
- For best flavor, put chicken thighs in a medium sized casserole dish and pour marinade over. Marinate chicken for 30 minutes.
- Once chicken are nearly finished marinating, heat a large saute pan over medium high heat.
- Once pan is hot, add olive oil and heat for 2-3 minutes.
- Add onions and cook, stirring occasionally, for about 3 minutes or until onions begin to look shiny and partially cooked.
- Place chicken in saute pan and add marinade to pan.
- Allow to cook in marinade for about 15 minutes or until chicken is 165 F in the center.
- Add chicken broth to marinade once chicken is done cooking and stir slightly to incorporate.
Adding the chicken broth after cooking allows the chicken to cook in the more concentrated marinade, giving it the best flavor. Adding the chicken broth makes the marinade into a sauce that can be served with the meal.
- Add salt and pepper to taste
- Serve over rice with sauce
